Cream of Broccoli Soup
Ingredients
1½ pounds broccoli
Medium onion, chopped
2 tblsp. butter
1 potato, diced
2 cups chicken broth
½ tsp. salt
Dash pepper
1 cup light cream or half and half
1/8 tsp. nutmeg
1 tblsp. flour or cornstarch
Method
Trim broccoli and cook in water 5 minutes . Drain well. Saute onion in butter; add flour, potatoes, chicken broth, salt and pepper. Heat to boiling, then simmer 10 minutes. Add broccoli; simmer 5-10 minutes more. Add ½ cup cream, blend, and add remaining ½ cup. Heat and serve. Do not boil.
